Bubble-Up Enchilada Casserole

We all have go-to recipes that we use when life gets a little busy, right? You know those evenings when you've had a long day at work, or the baby has been screaming for hours, or your child has soccer practice right after school... This recipe is one of my go-to's. I love that I can use ground beef, turkey or chicken in this recipe, which makes it extra versatile (a must have in a go-to recipe). However, the best thing about this recipe...the kids love it. I don't have to listen to "I don't like that", or "It looks disgusting", or "Not that again", the kids eat it and they actually ask for more.

This recipe is so easy. Basically, just cook up the ground meat of your choice. We usually use ground beef or turkey and then add all of the other ingredients to the pan. Make sure you mix it up really well.

Add in the biscuit pieces and stir gently. Then pour everything into a lightly sprayed cooking dish.Cook for 25 minutes, then sprinkle with cheddar cheese. 
Cook 10 more minutes or until the cheese is all melty (it's a word, right?) and bubbly.

Bubble Up Enchilada Casserole

1 1/4 lbs extra lean ground turkey (or beef or chicken)
1 (10 oz) can enchilada sauce
1 (8 oz) can tomato sauce
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (7.5 oz) can refrigerator "Homestyle" biscuits, cut into quarters
1 Cup shredded cheddar cheese

1. Preheat oven to 350 degrees. Lightly mist a 9x13 baking dish with cooking spray and set aside.
2. Brown turkey (or beef or chicken) in a large skillet or saute pan. 
3. Add the enchilada sauce, tomato sauce, black beans and corn and stir to combine. Stir the biscuit pieces into the mixture.
4. Transfer the entire mixture to the prepared baking dish and spread out evenly. Bake for 25 minutes. Remove from oven and sprinkle the top with cheese. Bake an additional 10 minutes. Let stand for 5 minutes before serving. 

Yields 6 servings.
