I don't know about you, but I love pancakes for breakfast. Unfortunately, I'm taking part in a "lifestyle change" (shhh...you know...the 'd' word), and things like syrup aren't really all that Point friendly. So to get around this a little bit, and to include some fruit into my diet I like to whip up a little fruit topping for my pancakes now instead of syrup. I know it's cheating, but I almost always use a mix when I make pancakes in the morning. I always try to spice them up a little bit by adding a teaspoon or two of my homemade vanilla into the mix though, it seems to give them a little pick-me-up. For this recipe, follow the directions on your mix and whip yourself up some pancakes. I use no-stick cooking spray when I cook my pancakes. Preheat your oven to the lowest possible temperature, and put your pancakes on an ovenproof dish or pan and pop those suckers into the oven to keep them warm while you work on the topping.The topping is super simple, and I use the same griddle (one of those small jobies that fits on one burner), if you don't want to use the griddle, a small saute pan will work fine.
There's no exact science to this recipe. I add a little butter and a little brown sugar until it has the look I want. The recipe below are guestimations on what I use for this topping.
On the already preheated griddle drop a pat of butter (approx 1-2 tsp) and let melt. While the butter melts, slice one banana and add to the butter on the griddle. Sprinkle with 1 tbsp of brown sugar. Saute until the butter and brown sugar mix together and it gets bubbly. Pour over plated pancakes. Enjoy!
Sauteed Banana Topping
(Serves 1)
1-2 tsp butter
1 banana sliced
1 tbsp brown sugar
Melt butter in a warm saute pan or warm griddle. Add sliced bananas and brown sugar. Saute until all ingredients are incorporated and the banana's are coated. Pour over plated pancakes. Sprinkle with cinnamon or nutmeg for decoration and enjoy.
The recipe above serves 1, but can easily be adapted to serve more.
